So simple and easy to make. But hey! Be mindful of this one, cause it’s LOADED.
INGREDIENTS (serves 2):
- 1 cup of cooked cannellini beans (white beans).
- 1 cup of finely diced or grated carrots, zucchini, onion and tomato.
- 4 cloves of garlic.
- 3-4 medium sized potatoes.
- 1/4 cup of chopped chives.
- 1 tablespoon of creole spice blend.
- Salt to taste.
- 2 teaspoons of Olive oil.
- 3 cups of water.
METHOD:
- Soak the beans overnight and pressure cook or boil till soft.
- Drain the water, once cooked.
- In a small pan, add finely grated vegetables and garlic in teaspoon of olive oil.
- Cook for 5-6 minutes till veggies are soft.
- Add the creole spice blend, salt and little water.
- Cook till water dries up, beans and the veggies and cooked together.
- While the veggies are cooking, half the potatoes and partially boil till partially soft.
- Then bake at 180° for 15 mins.
- Take the potatoes out and scoop out little potatoes to make it a hollow cup.
- Add the bean mix to it.
- Garnish with little chives.
It’s ready to eat!
