Comfort food comes in all shapes, forms and sizes. Here’s one of them!

It’s all about the idea of “comfort” we live with.

A bowl of broth or soup is so comforting on a cold day, right? And to top it all, it is wholesome and depending upon how it’s made, it can be very healthy, satiating and absolutely healing.

Sharing the recipe here today, It can actually be served as is (liquid drink or soup) or can be be added to the preparation of grains or vegetables or meat (but be mindful, this method can also add up to a little extra calories and if you are being mindful about calorie count).

INGREDIENTS:

  • Chicken Leg (chop off little meat and use the bone as well, if you’re making the vegan broth remove the chicken and add little more mushroom)
  • 2 cups of chopped vegetables (green beans, mushrooms, carrots; you can also add other root vegetables, which make it really healing for the microbiome, such as parsnip, potato or yam)
  • 2 teaspoons of turmeric
  • 3 cloves
  • 1 star anise
  • 5-7 cups of water
  • Ginger and garlic (optional, this one doesn’t have it)

METHOD:

  1. Use a deep large pan, add the chicken (remove, if making a vegan broth) and vegetables.
  2. Add the spices and salt, along with water.
  3. Bring to boil in medium heat for 10-15 minutes.
  4. Drink up as a soup or add to your grains.
