AMARANTH PORRIDGE

This is a high protein sweet treat for “protein” enthusiasts. You will love it. Growing up, my gran used to make this during special festive occasions or on times we needed to go on “fasting.” Now it seems all these healthy habits are coming back but not in the most healthiest way, I think. It is flavorful and so yummy.

So what’s in it, which serves one or two?

  • 5 tablespoons of Amaranth seeds.
  • 1 tablespoon of raw bourbon vanilla powder (not the artificial essence) or pod.
  • 1 tablespoon of honey.
  • 1 teaspoon of homemade granola or nuts for garnish.
  • Few berries on top, to garnish or banana or any fruit you fancy.

Process of Cooking

  • Bring a pan to heat.
  • Dry roast the amaranth first in very low heat for only 3-5 minutes.
  • Once lightly brown, add 2 tablespoons of pure coconut cream with water or 2 cups of coconut milk. ?Add vanilla and honey to taste.
  • Cook for 15-20minutes until the amaranth is completely cooked and is soft.
  • Once cooked, plate it up.
