My favourite broth recipe: Chicken & Vegan.

This is my favourite recipe of all time and I use it for multiple reasons. While I am vegan, my man is not. So I usually make chicken broth for my man and vegan broth for myself.

COMFORT FOOD comes in all shapes, forms and sizes. It’s all about the idea of “comfort” we live with.
A bowl of broth or soup is so comforting on a cold day, no? And to top it all, it is wholesome and depending upon how it’s made, it can be very healthy, satiating and absolutely healing. You’d have seen my IG story yesterday on  the yummy chicken broth I made. Sharing the recipe today… It can actually be served as is (liquid drink or soup) or can be be added to the preparation of grains or vegetables or meat (but be mindful, this method can also add up to a little extra calories and if you are being mindful about caloric count, just know).
INGREDIENTS:
๐Ÿ‘‰๐ŸผChicken Leg (chop off little meat and use the bone as well, if you’re making the vegan broth remove the chicken and add little more mushroom)
๐Ÿ‘‰๐Ÿผ2 cups of chopped vegetables (green beans, mushrooms, carrots; you can also add other root vegetables, which make it really healing for the microbiome, such as parsnip, potato or yam)
๐Ÿ‘‰๐Ÿผ2 teaspoons of turmeric
๐Ÿ‘‰๐Ÿผ3 cloves
๐Ÿ‘‰๐Ÿผ1 star aninse
๐Ÿ‘‰๐Ÿผ5-7 cups of water
๐Ÿ‘‰๐ŸผGinger and garlic (optional, this one doesn’t have it)
METHOD:
๐Ÿ’›๐ŸงกUse a deep large pan, add the chicken (remove, if making a vegan broth) and vegetables. Add the spices and salt, along with water. Bring to boil in medium heat for 10-15 minutes.๐Ÿงก๐Ÿ’›
Drink up as a soup or add to your grains. Enjoy, it’s really comforting.
