Who wants some YELLOW soup?

I cannot emphasize hard enough how much good wholesome food, that suits your body, can actually enable you to stay healthy (with better immunity, low or no rate of falling sick and being free of medical conditions). Given that viral threats are always around, it is important to be mindful and bit more in control of the food choices we make today.

Here’s a loaded meal, rich in vitamin C, rich in antioxidants zinc and also immune booster.

I made this simple soup the other day and had with a slice of bread and salad.

INGREDIENTS:

  • 1 cup chopped yellow capsicum.
  • 1 cup chopped yellow beans (fresh ones).
  • 1/4 cup of chopped potato.
  • 1/2 cup coriander leaves.
  • Pinch of turmeric.
  • Yellow chilis (just for the colour).
  • Salt to taste.
  • Teaspoon of olive oil.
  • 1/2 teaspoon of cumin powder (optional).
  • Finger length piece of ginger, grated and 4 garlic cloves.
  • 4 cups of water.

Method:

  1. Use a deep pot or a pan, add 4 cups of water to it. With a teaspoon of olive oil, pinch of turmeric.
  2. Bring to boil and add chopped veggies, ginger and garlic. Don’t add the herb, yet.
  3. Add salt to taste, chili powder if you like.
  4. Let the veggies cook. Once cooked add the coriander leaves to it.
  5. Blend in a blender.

And serve and EAT!
