Well, I’ve not always loved tabouleh. But since the time I started adding quinoa to it, I’ve absolutely loved it!!!! I love the version I make. It’s so simple and as you know it, I’m a minimalist. I’m not going to use any details of why it’s good for health but simply tell you to EAT. A simple homemade goodie which helps you inside out (that’s enough info from me).
Here are the ingredients:
Chopped greens such as parsley (or sometimes coriander, yes), mint and kale (goodie good).
Sliced cherry tomatoes is what I’ve used here, feel free to use regular one too.
1 cup of cooked quinoa (I’ve used tricolour)
Lemon juice to taste
1 teaspoon of Olive oil.
Put all the ingredients on a plate and toss it up folks.
Use the oil and juice to mix it well.
Eat!!! (you get a lot of micronutrients with this one).
