Jacket Potatoes or Potato Cups? Recipe is right here!

So simple and easy to make. But hey! Be mindful of this one, cause it’s LOADED.


INGREDIENTS (serves 2):

  • 1 cup of cooked cannellini beans (white beans).
  • 1 cup of finely diced or grated carrots, zucchini, onion and tomato.
  • 4 cloves of garlic.
  • 3-4 medium sized potatoes.
  • 1/4 cup of chopped chives.
  • 1 tablespoon of creole spice blend.
  • Salt to taste.
  • 2 teaspoons of Olive oil.
  • 3 cups of water.



  1. Soak the beans overnight and pressure cook or boil till soft.
  2. Drain the water, once cooked.
  3. In a small pan, add finely grated vegetables and garlic in teaspoon of olive oil.
  4. Cook for 5-6 minutes till veggies are soft.
  5. Add the creole spice blend, salt and little water.
  6. Cook till water dries up, beans and the veggies and cooked together.
  7. While the veggies are cooking, half the potatoes and partially boil till partially soft.
  8. Then bake at 180° for 15 mins.
  9. Take the potatoes out and scoop out little potatoes to make it a hollow cup.
  10. Add the bean mix to it.
  11. Garnish with little chives.


It’s ready to eat!
