
Khichdi Alert Guys! Khichdi for everyone!

I honestly can’t explain how happy it makes me to see how the WORLD is embracing our good old traditional healing khichdi. There are so many ways to make khichdi and I am going to share “One of the Versions” of mine.
Quinoa Khichdi.
It is quick and easy to make and takes such little time as well, nourishes you and gives you all the essential aminos you need for your body.
INGREDIENTS (serves 1)
- 1/2 cup white quinoa (washed and soaked).
- 1.5 cups of chopped mixed vegetables such as capsicum, onion, tomato, carrot, green beans, cauliflower.
- Spices: 1/2 teaspoon of turmeric, 1/2 teaspoon of garam masala, 1 bay leaf, salt and red chili powder to taste.
- Fresh ginger and garlic
- 2 teaspoons of olive oil
- 2.5 cups of water.
METHOD:
- Use a broth pot or a pressure cooker.
- Add the oil first and bring to low heat.
- Add the spices and stir for a minute or two.
- Mix well.
- Add the vegetables and let it cook for about 5 minutes.
- Once lightly cooked add the quinoa with water and boil till quinoa germinates.
- Mix well.
Sidenote: I’ve garnished it here, usually don’t temper it but here, I’ve used teaspoon of whole jeera and whole coriander. Garnished with coriander.
