
Quinoa lovers, would you love a Quinoa Sprouts Salad!

I’m actually glad this nutritionally dense food came into my life. Although many millets in India come with similar properties, I seem to have developed a particularly biased liking for this seed. It is the brother of our ancient grain amaranth (which, I also love).
Just simply boiled the 10 grams of quinoa and:
For the salad I used some:
- Plain lentil sprouts: whole moong
- Whole yellow lentils and whole pink lentils(which were soaked and kept in muslin cloth for 30 hours to give this dish such good flavors to work with)
- Chopped cucumber, chopped carrot, chopped tomato, chopped onion, baby spinach, fresh cilantro
For the dressing:
- A teaspoon of mustard oil
- Salt and red chili powder
- Teaspoon of lemon
- Teaspoon of Indian chaat masala
Drizzle that dressing over people and it’s done!
