RECIPE ALERT! Zucchini Wrapped Patties!

Next time you have a party at home or someone is coming over, feed them, these healthy yet flavorful zucchini wrapped patties. They are so easy to make and taste DIVINE. There is a non-vegetarian, “salmon version” of it as well that I’ve made for my friends, where you use bite sized pieces of salmon, marinate in herbs like thyme and rosemary, garlic and olive oil, salt and green chili.

Wrap lightly oiled zucchini peels around and cover completely.

Bake for 20 mins at 180°. Pull it out and serve.

However, this one my VEGAN VERSION, loaded with nutrients through veggies.

Ingredients:

  • 1 cup of finely diced spinach
  • 1 cup of grated zucchini (add little salt and press to remove water)
  • 3 cloves of finely diced garlic
  • 1/2 cup of boiled potato
  • 1/2 cup of boiled quinoa (mashed)
  • 1 tablespoon of oats flour.
  • 1 teaspoon of dried mint, rosemary and thyme
  • Salt and chilies to taste, with little sumac
  • 3 tablespoons of olive oil

Method:

  1. Mix the veggies and the quinoa and oats in a bowl.
  2. Keep mixing the veggies, spices till the mix becomes like a thickish dough.
  3. Use your hands to make small, flat round patties.
  4. Use a flat pan. Add 1/2 teaspoon of olive oil. ??Cook till the patty, till it is lightly brown (light only as it will be baked)
  5. Peel out thin slices of zucchini. ??Wrap lightly oiled peels around the patties.
  6. Bake for 15 minutes at 180°
  7. Serve and eat.

If you truly want to make it healthy, avoid using carcinogenic and high sugar products such as packed mayo, ketchup. Serve with a homemade herb dip! Enjoy!
