The Amaranth Energy Ball!

I usually make popped amaranth granola for my breakfast or usually a light snack. But these are quite different from my routine. Since everyone around me is in the Festive Navratri mood, I thought of making Rajgira Laddus. It is a festive delight for sure.

So, what have I used here:

  • 10 tablespoons of Roasted Amaranth
  • 1/2 cup of chopped nuts & seeds such as almonds, pumpkin seeds & pecan
  • 4 tablespoons of honey (or jaggery or an alternative you like)
  • 1 tablespoon of cardamom powder for flavor
  • 1 tablespoon of cinnamon

Method:

  • Spread it out on an oven tray or a pan
  • Preheat oven on 120°.
  • Add the tray in for 15 to 20 mins, pull it out after 10 minutes to check if the consistency is gooey and thick.
  • Let it caramelize until the color becomes golden brown.
  • Keep it aside and let it cool.
  • Then make small balls out of it.
